ONION PUDDING 
1 lb. sweet onions
3 tbsp. butter
1/2 c. flour
2 eggs
Salt
pepper
2/3 c. milk

Preheat oven to 450 degrees. In pan stew thinly sliced onions gently in 2 tablespoons butter for about 1/2 hour without letting them color. In a bowl add flour, eggs, salt and pepper and milk and whisk until smooth; stir in onions (slowly, if still hot). Butter gratin dish with remaining butter. Pour into dish, bake 20 to 25 minutes or until swelled up and browned. Serves 4.
