SUMMER DESSERT PIZZA | |
1/4 c. butter, softened 1/2 c. sugar 1 egg 1/4 tsp. vanilla extract 1/4 tsp. lemon extract 1 1/4 c. all-purpose flour 1/4 tsp. baking powder 1/4 tsp. baking soda 1/4 tsp. salt 4 oz. cream cheese, softened 1/4 c. confectioners sugar 1 c. whipped topping 1 firm banana, sliced 1 c. sliced fresh strawberries 1 (8 oz.) can mandarin oranges, drained 2 kiwi fruit, peeled and thinly sliced 1/3 c. fresh blueberries Glaze: 1/4 c. sugar 1/4 c. orange juice 1/4 c. water 2 tsp. cornstarch In a mixing bowl, cream butter and sugar. Beat in egg and extracts. Combine flour, baking powder, baking soda and salt. Add to creamed mixture. Beat well. Cover and chill for 30 minutes. Press dough into greased 12 or 14-inch pizza pan. Bake at 350°F for 12 to 14 minutes or until light golden brown. Cool completely. In a mixing bowl, beat cream cheese and confectioners sugar until smooth. Add whipped topping. Mix well. Spread over crust. Arrange fruit on top. Combine glaze ingredients in a saucepan. Bring to a boil, stirring constantly. Boil for 2 minutes or until thickened. Cool to room temperature, about 30 minutes. Brush over fruit. Store in the refrigerator. Yield: 12 to 16 servings. |
