LEMON BLOSSOM COOKIES 
2 c. butter, softened
1 1/2 c. confectioners sugar
1/4 c. lemon juice for concentrate
4 c. unsifted flour
Nuts, finely chopped
Assorted Bama fruit preserves & jams or pecan halves

Preheat oven to 350 degrees. In large mixer bowl, beat butter and sugar until fluffy. Add lemon beat well. Gradually add flour, mix well. Chill 2 hours. Shape into 1-inch balls, roll in nuts if desired. Place 1-inch apart on greased baking sheet. Press thumb in center of each ball. Fill with preserves, jams or pecan halves. Bake 14 to 16 minutes or until lightly brown.
