EGGPLANT BASKETS 
2 lg. eggplants
2 tbsp. melted butter and olive oil, mixed
1 lb. ground beef
3 cloves garlic, minced
1 8 oz. can Hunt's tomato sauce
1/2 tsp. each basil and oregano
1/2 c. red wine
1/2 lb. Mozzarella, sliced thin

Cut eggplant in half from stem end. Scoop out pulp, leaving 1/2 inch shell. Cut into small cubes. Cook in butter until soft and slightly brown, about 10 minutes, set aside.

Brown hamburger in pan; drain and mix in eggplant, tomato sauce, basil and oregano and wine. Top with cheese.

Place eggplant shells in a greased baking dish and bake in a preheated 375°F oven for 45-55 minutes or until cooked through and cheese is bubbly.
