POTATO CASSEROLE 
1 (2 lb.) bag frozen hash brown potatoes (leave out awhile or microwave very little)
1/2 c. butter
1 lg. onion, chopped

Heat together butter and onion until onion is transparent.

Mix potatoes, onion and butter.

1 tsp. salt
1 can cream of chicken soup
16 oz. sour cream
1 c. grated cheese

Top with 1 cup butter and 1 cup Ritz crackers. Spray casserole pan with Pam. Bake at 350 degrees for 45 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
