PARTY CHEESECAKE 
1 lb. cream cheese, softened
3/4 c. sugar
2 eggs
1 tsp. vanilla
Vanilla wafers
Paper-lined muffin cups
1 can (1 lb. 6 oz.) cherry pie filling

Beat first four ingredients together until smooth. Place vanilla wafers in bottom of paper-lined muffin cups. Fill 3/4 full with cheese mixture. Bake in moderate oven (375 degrees) 10 minutes. Remove from oven and cool. Top with 1 can cherry pie filling. Chill thoroughly. Makes approximately two dozen.

NOTE: Other fruit or berry pie fillings may be used in place of cherry.
