1/2 c. chopped celery
1/2 c. grated onions
3 hard boiled eggs, chopped
3/4 c. Old English sharp cheese
1/2 to 1 c. mayonnaise
1 tsp. vinegar
1/2 tsp. salt
Dash of Tabasco sauce

Mix mayonnaise, vinegar, salt and Tabasco and add to the celery, onions, eggs and cheese. Pour over fresh spinach.
