GREEN BEANS AND NEW POTATOES 
1 1/2 lbs. green beans, trimmed & broken into 1" pieces
2 oz. salted pork (other favorite seasons)
1/2 tsp. salt
1/2 c. strong chicken stock
6-8 sm. new potatoes

Combine the green beans, salted pork (or other favorite season), salt, chicken stock in a large saucepan. Bring to a boil, then reduce heat. Simmer the beans, covered, for 30 minutes. Add the potatoes, cover and cook for 30 minutes, stirring occasionally. All the liquid should be absorbed by this time; if it is not, raise the heat and cook the vegetables, uncovered until fairly dry. Serves 4.
