PINEAPPLE-CARROT BARS | |
1/3 c. honey 2 tbsp. safflower oil 1 tsp. vanilla 2 egg whites 1 c. whole wheat flour 1 tsp. baking powder 1 tsp. baking soda 1 tsp. cinnamon 1 c. finely shredded carrots 2/3 c. raisins 3 tbsp. skim milk 1 (8 oz.) can crushed pineapple, drained Stir honey, oil, vanilla and egg whites well; set aside. Combine flour, baking powder, soda, and cinnamon, stir well; add to first mixture. Add carrots, raisins, milk, and pineapple; stir well. Spread in 9x13x2 inch pan coated with cooking spray. Sprinkle with 1 teaspoon powdered sugar, if desired. Bake at 350 degrees about 25 minutes. Yield: 2 dozen 2 x 2 1/2 inch bars. About 61 calories each. |
