BREAD PUDDING WITH RUM SAUCE | |
3 eggs, slightly beaten 3 c. milk 3 c. crumbled day old biscuits 1/2 c. sugar 1/2 c. raisins 1/4 c. butter, melted 1/4 tsp. salt 1 tsp. grated lemon rind 1/4 tsp. ground nutmeg Combine eggs and milk; stir well. Add biscuits and next 5 ingredients, stir gently. Spoon mixture into a greased 2 quart baking dish. Place in a larger shallow pan. Add water to depth of 1 inch. Bake at 350 degrees for 50 minutes. RUM SAUCE: 3/4 c. sugar 1 tbsp. cornstarch 1 c. water 2 tsp. rum flavoring 1/2 tsp. lemon juice 1 tbsp. butter Combine first 4 ingredients; cook, then add last 2 ingredients. Pour over baked bread pudding. |
