PINEAPPLE UPSIDE-DOWN CAKE 
3 eggs
1 c. sugar
1 c. flour
4 tbsp. water (cold)
1/2 tsp. vanilla
1 tsp. baking powder
1 c. brown sugar
1 med. can crushed pineapple, drained
Whipping cream or Cool Whip

Beat 3 egg yolks and add sugar and beat well. Add cold water, vanilla, flour and baking powder. Mix together and add egg whites, stiffly beaten. Butter a 9 x 12 inch pan and cover with brown sugar on bottom and pineapple on top. Pour batter over this and bake at 350 degrees for 30 minutes. Remove from oven and cut around sides and place cookie sheet on top and flip over. Serve with cream or Cool Whip. Serves 8.
