NO-PEEK CHICKEN AND RICE 
1 c. uncooked rice
1 chicken, cut into pieces
1 can cream of mushroom soup
1 can water
1 c. cooking sherry
1 pkg. onion soup mix

Butter a 16"x11" baking pan. Sprinkle rice over the bottom of pan. Lay chicken, skin side up, on rice. Pour condensed soup, sherry and water over chicken. Sprinkle onion soup mix over all. Cover tightly with aluminum foil, making sure edges are sealed around pan. Bake at 375 degrees for 1 1/2 hours, but DON'T PEEK or rice will burn.
