MY GRANDMOTHER'S CAKE 
2 c. flour
2 1/2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
1 c. oil
2 c. sugar
3 eggs
1 (8 oz.) can crushed pineapple in juice
2 c. grated carrots
1 1/2 c. coconut, grated
1/2 c. chopped nuts
1/2 c. raisins

Mix flour, baking soda, cinnamon and salt. Beat eggs, sugar and oil thoroughly. Add flour mixture and beat until smooth. Add pineapple, carrots, coconut, nuts and raisins. Pour into two 9-inch cake pans or one 9 x 13 inch pan. Bake at 350 degrees for 50-60 minutes.

PINEAPPLE CREAM CHEESE FROSTING:

1 lb. powdered sugar
1 (8 oz.) pkg. cream cheese
1 stick butter
2 tsp. vanilla
1 c. chopped nuts
1 (8 oz.) can crushed pineapple, drained VERY dry

Combine all ingredients. (More powdered sugar may be required in frosting a layer cake). Keep cake refrigerated.
