GRANDMOTHER'S HUMMINGBIRD CAKE | |
3 eggs, beaten 2 c. sugar 2 c. cake flour 1 tsp. baking soda 1 tsp. cinnamon 1 tsp. salt 1 sm. can crushed pineapple, unsweetened 1 c. nuts 1 c. bananas, mashed 1 1/2 c. Crisco oil 1 tsp. vanilla Sift and mix dry ingredients together. Set aside. Cream oil and sugar together. Add dry ingredients, eggs, fruit, nuts and vanilla. Bake at 350 degrees in a greased and floured tube pan. FROSTING FOR LAYERS: 1 stick butter 8 oz. cream cheese 1 box powdered sugar 2 tsp. vanilla Cream mixture together. Spread between layers. FROSTING FOR TUBE PAN: 1/2 stick butter 1 sm. cream cheese 1 tsp. vanilla Powdered sugar Mix together and frost cake when cooled. |
