HUMMINGBIRD CAKE AND FROSTING 
3 c. all-purpose flour
2 c. sugar
1 tsp. salt
1 tsp. baking soda
1 tsp. ground cinnamon
3 eggs, beaten
1 1/2 c. salad oil
1 1/2 tsp. vanilla flavoring
1 (8 oz.) can crushed pineapple, undrained
1 c. pecans
2 c. chopped bananas

Combine dry ingredients in mixing bowl, add eggs and salad oil, stirring until moistened. DO NOT BEAT! Stir in vanilla, pineapple, pecans and bananas. Spoon batter into 3 greased and floured 9 inch pans. Bake at 350 degrees for 25-30 minutes. Cook in pans 10 minutes. Remove and completely cool. Frost with cream cheese frosting.

CREAM CHEESE FROSTING:

8 oz. cream cheese
1 stick butter (Parkay)
1 box powdered sugar
1 tsp. vanilla flavoring
1 c. chopped pecans

Mix well.
