APRICOT TEA BREAD | |
1/2 c. dried apricots Cold water to cover 1 lg. orange 1/2 c. seedless raisins 2 c. all purpose flour 1 tsp. baking soda 2 tsp. baking powder 1 c. sugar 1/4 tsp. salt 1/2 c. chopped nut meats 1 egg 2 tbsp. melted butter 1 tsp. vanilla Cover apricots with water for 1/2 hour; drain. Squeeze juice from orange, reserve peel and add enough boiling water to juice to make 1 cup. Put orange peel, apricots, raisins, nuts through medium blade of food grinder or food processor. Chop up. Sift flour, soda, baking powder, sugar and salt in bowl. Add fruit mixture, nuts meats and orange juice. Stir in beaten egg, melted butter and vanilla. Bake in greased 8 1/2" x 4 1/2" loaf pan at 350 degrees for 50 minutes. Let stand 10 to 15 minutes before removing from pan. |
