DOUGHNUTS 
2 pkg. active dry yeast
1/4 c. warm (not hot) water
1 1/2 c. lukewarm milk (scalded, then cooled) or heat in microwave for 3 minutes
1/2 c. sugar
1 tsp. salt
1 tsp. nutmeg
1/4 to 1/2 tsp. cinnamon
2 eggs
1/3 c. shortening
5 c. all purpose flour

Dissolve yeast in warm water in large mixer bowl. Add milk, 1/2 cup sugar, salt, spices, eggs, shortening, and 2 cups flour. Blend 1/2 minute on low speed, scraping constantly. Beat 2 minutes on medium speed, scraping occasionally. Stir in remaining flour.

Cover, let rise in warm place until double, 1 hour. Turn onto well floured board. Roll until 1/2 inch thick. Cut with doughnut cutter. Cover, let rise on flat surface until double, about 20 minutes.

Heat deep fryer to 350 degrees. Drop into hot fat. Fry until golden brown, about 1 to 1 1/2 minutes on each side. Drain. While warm, roll in cinnamon/sugar mixture or spread with a glaze.

Since microwave ovens vary in power, you may need to adjust your cooking time.
