BAKED APRICOTS 
2 lg. cans peeled apricots
2 boxes light brown sugar
1 lg. box Ritz crackers
Butter (lots of it)

In a greased baking dish, put a layer of apricot halves. Cover with brown sugar, then a layer of crumbled Ritz crackers and dot thickly with lumps of butter (repeat this to top of the dish). Bake slowly in a 300 degree oven approximately 1 hour. It should be thick and crusty on top. It's also best to drain your apricots well because it gets too juicy.
