JACKIE'S RED VELVET CAKE | |
2 1/2 c. plain flour 1 c. buttermilk 1 1/2 c. sugar 1 1/2 c. oil 2 eggs 1 tsp. baking soda 1 tsp. salt 1 tsp. lemon juice 2 tsp. cocoa 1/2 bottle red food color 1 1/2 tsp. vanilla butter nut flavor Mix flour, baking soda, salt and cocoa in bowl. In separate bowl cream oil, sugar and eggs. Add lemon juice and food coloring and mix. Add buttermilk, flavoring and dry ingredients from other bowl and mix. Place mixture in 3 greased and floured round cake pans and bake at 275 degrees for 35 to 40 minutes. FROSTING: 1 stick butter 1 pkg. cream cheese (8-12 oz.) 1 box powdered sugar 1 tsp. vanilla 1 c. nuts Cream butter and cream cheese. Add vanilla flavoring and sugar, mix until smooth. Put icing on cooled cake and sprinkle nuts on top. |
