BEEF SOUP 
18 c. water
1 lb. chuck roast, cut in 3 pieces
2-3 pieces short ribs

Bring to boil. Take off the scum with strainer.

Add:

3 diced carrots
3 diced celery, plus a couple leaves
1 can tomatoes, cut in pieces
1 onion, keep whole to take out later
3 tsp. salt
Pinch of pepper

Bring to boil then simmer for 2-2 1/2 hours, until meat is cooked. After meat is cooked take it out, cool it off, cut it up. Put meat back in soup and bring to boil. Add meatballs.

MEATBALLS:

1/2 lb. hamburger
3 tbsp. bread crumbs
2 heaping tbsp. Roman cheese
Little black pepper
Pinch of salt
1/2 tsp. parsley
1 egg
1 tbsp. water

Cook about 20 minutes to half hour with meatballs. Cook acini di-pepe pastine 5 minutes after begins to boil. Drain water. Add pastine to soup. let cook about 5 minutes.
