BEEF STEW FOR FAMILY 
Sm. chuck roast, cut up and deveined
4-5 ribs celery
4-5 slices carrots
1 med. onion, diced
1 tbsp. parsley
3 lg. potatoes
1 lg. can crushed tomatoes
1 can mushrooms

Dredge meat in flour mixed with salt and pepper. In Dutch oven put 2 tbsp. oil and heat. Add meat, brown well on medium. Add can of tomatoes, celery, carrots, onion, parsley and simmer 2 hours on medium slow.

Boil potatoes about 1/2 hour before serving separately. Potatoes hold up better if added to bowl right before serving. Add 1 can mushrooms the last 1/2 hour.
