CHICKEN CASSEROLE 
4 boned chicken breast or 1 whole chicken, cooked
1 can cream of chicken soup
1 c. sour cream
1 stack pack Ritz crackers, crushed
1 stick butter
Poppy seeds, optional

Cut chicken into bite-size pieces. Spread in the bottom of a casserole dish. Combine soup and sour cream. Pour mixture over chicken. Spread cracker crumbs on top. Sprinkle poppy seeds generously over top. Dot with butter. Bake at 300 degrees about 15-20 minutes.
