BENEDICTINE SANDWICH SPREAD 
1 medium onion, peeled and cut into chunks
1 cucumber, peeled and cut into chunks
2 (8 oz.) pkgs. cream cheese, softened
1/4 tsp. salt
3 drops green food coloring

Position knife blade in processor bowl; add onion and cucumber. Process 3 to 5 seconds. Stop processor and scrape sides with a rubber spatula. Process 3 to 5 additional seconds or until vegetables are finely chopped. Remove vegetables and drain well.

Position plastic blade in bowl. Cut cream cheese into about 1 inch pieces; place in processor bowl. Process 8 to 10 seconds or until smooth. With processor running, add vegetables and salt through food chute; process 20 to 25 seconds or until well combined. Add food coloring; process 5 seconds or until well combined. Spoon mixture into a covered container and chill thoroughly. Spread on pumpernickel bread and top with lettuce leaves, if desired. Yield: About 2 1/2 cups.
