MOUSSE AU CHOCOLAT 
1 c. (6 oz.) semi-sweet chocolate bits
5 tbsp. boiling water
4 eggs, separated
2 tbsp. dark rum (or 1 tbsp. instant coffee)

Put chocolate into blender. Blend high speed 6 seconds. Scrape and add water. Blend high speed 10 seconds. Add egg yolks and rum. Blend smooth 3 seconds.

Fold chocolate into stiffly beaten egg whites and spoon into individual ramekins and chill. Quick and dependable! Serves 8.
