HAM BALLS 
Thin slices of turkey breast, ham, or fish

FILLING:

Spinach, chopped
Mushrooms, chopped
Celery, chopped
1 egg
Salt and pepper
White sauce (following)

PARSLEY WHITE SAUCE:

2 tbsp. butter
2 tbsp. flour
1/4 tsp. salt
Dash of pepper
1 c. milk
1/4 c. finely chopped parsley

Melt butter in saucepan, stir in remaining ingredients. Then add to top of five filling ingredients. Roll inside slice of meat, and hold together with a toothpick. Bake in oven about 45 minutes.

TOPPING:

Put cheese and a little milk in top of double boiler. Sprinkle with paprika. Heat and pour over the ham roll when it is ready to serve.
