CHEESE PASTRY 
1 lb. dry cottage cheese
1 lb. butter
1 lb. flour
(1/2 tsp. salt)

Mix and knead until smooth. Make into small balls about the size of a walnut and place on cookie sheet. Cool in refrigerator. When firm, roll out and cut in half (or use the whole ball) and fill with dates, nuts or jelly.

When rolling out dough, use powdered sugar instead of flour to keep from sticking. When filled, fold over square and place on cookie sheet and bake in 350 degree oven until slightly browned. Dip in powdered sugar if desired. Can be made without filling also.
