LAURA'S BEST VEGETABLE DISH | |
3 medium onions, diced 3 green peppers, diced 3 roasted red peppers, diced 2 (15 oz. ea.) cans diced tomatoes 1 large mushroom diced 1 squash, diced olive oil 1 cup instant brown rice salt and pepper, for taste Sauté onions with salt until soft over low to medium heat. Add green peppers and sauté onions and peppers together for about 1/2 hour. Slowly add the rest of the ingredients and cook everything on low heat with cover on for 2 hours. Keep stirring. At the end add the instant rice (stir) and let it cook until rice is done. Salt and pepper to taste... Serve with warm/fresh bread and grilled chicken. Skip the chicken and pour over pasta and it makes a great vegetarian dish. Enjoy!!! Submitted by: Laura B. |
