SOUTH OF THE BORDER CASSEROLE 
1 lb. lean ground round
3 tbsp. butter
3 green onions, chopped fine
3 cloves garlic
1 bell pepper, chopped
1 (15-16 oz.) can chili without beans
1 can cream of mushroom soup
1 can golden hominy
2 c. sharp Cheddar cheese
Crushed corn chips or tortilla chips
Salt and pepper to taste

Saute green onions and bell pepper in butter until limp. Add ground round and garlic that has been pressed through a garlic press. Brown meat, then drain well.

In a large bowl, mix ground meat mixture with chili, mushroom soup and hominy. Pour the mixture into a large casserole dish, top with grated cheese and crushed corn chips. Cook for 45 minutes in 350 degree oven.
