FROZEN MUD PIE SANDWICHES 
2 tbsp. sugar
1 1/2 tbsp. unsweetened cocoa
1 tsp. stick butter
1 1/4 c. chocolate frozen low-fat yogurt, softened
2 tbsp. light colored corn syrup
1 tbsp. 1% low-fat milk
1/4 tsp. vanilla extract
16 large or 48 small chocolate wafer cookies

Combine the first 4 ingredients in a small heavy saucepan. Bring the mixture to a boil over medium heat, stirring frequently with a whisk. Turn down to a simmer and cook on low heat for about 2 minutes or until thick. Stir the mixture frequently while it cooks. When finished, remove the mixture from the heat and stir in the butter and vanilla. Cover and chill thoroughly.

While the chocolate mix is cooling, evenly spread 2 tablespoons of frozen yogurt onto 8 of the large cookies. Soften the frozen yogurt if necessary. If you are using small cookies, spread 2 teaspoons of frozen yogurt onto 24 cookies. Put another cookie on top of each filled 1 to make a sandwich. Freeze the sandwiches for 15 minutes.

When both the chocolate mixture and the sandwiches are done chilling, bring them out and spread a small amount of the chocolate mixture on each sandwich. Put the sandwiches in an airtight container and return to the freezer until ready to eat.

Makes 8 large or 24 small sandwiches.
