HAM PASTRIES 
1/4 liter water
3 tbsp. butter
5 oz. cubed ham
2 oz. Parmesan or other cheese, cubed
Canola oil
1 c. tomato puree

Boil water and add butter. Stirring constantly. Add flour and cook until it rises from the bottom of the pot. Mix with eggs, then ham and cheese.

Heat oil to 375 degrees. Using rounded tablespoons drop dough into the oil and fry until golden brown. Drain on paper towels and serve immediately with tomato puree or other sauce.
