SHRIMP SCAMPI 
1/4 c. butter
1/4 c. salad oil or olive oil
2 tbsp. chopped parsley
1 tbsp. garlic powder
1/2 tsp. salt
Dash cayenne pepper
2 tbsp. lemon juice
1 lb. large shrimp, shelled and deveined - leave tails on

Melt butter. Add oil, half the parsley, garlic powder, salt, cayenne and lemon juice. Mix well. Add shrimp, toss gently with butter mixture. Arrange in pan in single layer. Bake 8 to 10 minutes. Sprinkle with remaining parsley. Bring pan to table, garnish with lemon wedges. Serve over linguine or rice. Makes about 4 servings.
