4 tbsp. butter
3 eggs
1 c. milk
1 c. flour
1/2 tsp. salt
1/2 tsp. seasoned salt
1/2 tsp. baking powder
2 pkgs. chopped spinach, thawed, drained
1 lb. Monterey Jack, grated or shredded
1/4 c. onion, chopped

Preheat oven to 350 degrees. Melt butter in 9 x 17 inch baking pan in oven. Beat eggs, add milk, flour, salt and baking powder and mix well. Stir in spinach, cheese and onions. Spoon into buttered baking pan. If using a heat-resistant pan, lower oven heat slightly. Bake 35 minutes. Remove from oven, let sit about 45 minutes, then cut into small squares for hors d'oeuvres or larger squares if serving as a main dish.
