POPEYE'S LASAGNA | |
6 lasagna noodles 2 tbsp. water 1 med. onion, chopped 1 clove garlic, minced 1 (8 oz.) can tomato sauce 1 (6 oz.) can tomato paste 3/4 c. water 1 tbsp. instant beef bouillon 1 tsp. sugar 1/2 tsp. dried basil leaves 1/2 tsp. dried oregano leaves 1/8 tsp. pepper 12 oz. fresh spinach (about 4 c.) 2 c. low-fat cottage cheese 2 eggs 3 c. (12 oz.) shredded Mozzarella cheese 1/3 c. Parmesan cheese Cook noodles as directed on package. Drain and rinse in cold water. Set aside. Combine water, onion, and garlic in 1 1/2 quart microwave-safe casserole. Microwave (high), uncovered, 3 to 3 1/2 minutes or until tender, stirring once. Stir in tomato sauce, paste, water, bouillon, sugar, basil, oregano, and pepper. Cover with casserole lid. Microwave (high) 8 to 9 minutes or until mixture boils several minutes, stirring once. Set aside. Wash spinach and remove large stems. Place in 2-quart microwave-safe casserole. Cover with plastic wrap. Microwave (high) 3 1/2 to 4 minutes or until steaming hot. Drain well by pressing leaves to drain juices. Chop coarsely by using knife or kitchen shears. Stir in cottage cheese and eggs. To assemble, layer half of noodles in bottom of 12 x 8 inch microwave safe baking dish. Top with half of sauce mixture, all of spinach mixture, 2 cups Mozzarella cheese and the remaining noodles and sauce mixture. Cover with waxed paper. Microwave (high) 5 minutes. Then, microwave (medium-high 70%), 12 to 15 minutes or until heated in center (150 to 160 degrees). Remove waxed paper. Sprinkle with remaining cheese. Microwave (high), uncovered, 3 to 4 minutes or until cheese is melted. Let stand 5 to 10 minutes before cutting and serving. With full power, microwave in step 7 for 12 minutes. Then let stand 5 minutes, microwave 5 minutes, let stand 3 minutes and microwave 3 minutes. Frozen chopped spinach can be substituted for fresh. Use a 10 ounce package and microwave in package 3 1/2 to 4 1/2 minutes or until thawed. Lasagna can be assembled ahead and then refrigerated. To heat, increase time from 5 minutes to 10 minutes on full power and 15 to 17 minutes on 70% power. |
