POTATO BANANA CAKE 
1 pkg. yellow cake mix
1 c. mashed ripe banana
1/4 c. potato flakes
3/4 c. buttermilk
1/4 c. orange juice
1/2 tbsp. orange peel
2 eggs
2 tbsp. oil

Combine all cake ingredients at low speed until moistened. Beat 2 minutes at highest speed. Pour batter into prepared pan; 13 x 9 inch greased and floured. Bake 35 minutes at 350 degrees.

FROSTING:

1/2 c. soft butter
2 tbsp. milk
1/4 c. potato flakes
1/8 tsp. butter rum
1 tsp. banana flavoring
1-1 1/2 c. powdered sugar

Beat well and spread on cake.
