MARIE CALLENDERS POTATO - CHEESE
SOUP
 
8 c. peeled & cubed potatoes
2 c. chopped onions
4 c. chopped celery
4 c. water
4 c. half & half
2 tsp. salt
6 tbsp. butter
1 c. grated sharp Cheddar cheese
4 tbsp. chopped parsley, optional

Place potatoes, onions and salt in water to cover, in a large pot. Simmer until tender, about 15 minutes. Put in blender or food processor fitted with the metal blade, and puree chunky style. Return to soup pot, add half and half, butter and cheese. Simmer until piping hot. (Do Not Boil) Garnish with parsley, if desired.
