ZUCCHINI SQUARES 
2 lb. zucchini, shredded
3 eggs, lightly beaten
1/4 c. mayonnaise
1/4 c. sliced scallion
1 tsp. marjoram, crushed
1/4 tsp. salt
1/8 tsp. pepper
1/2 c. flour
1/2 c. whole wheat flour
1 1/2 tsp. baking powder
3/4 c. pizza sauce
2 c. shredded Monterey Jack cheese

Place zucchini in clean kitchen towel and squeeze to remove excess moisture. Place in bowl. Stir in next 6 ingredients until well blended. Combine flours and baking powder. Stir into zucchini mixture. Spread into a greased and floured 15 1/2 x 10 1/2 x 1 inch jelly roll pan. Bake 30 minutes at 350 degrees. Spread with pizza sauce and sprinkle with cheese. Bake 15 minutes or until cheese is browned.
