CANDIED SWEET POTATOES 
4-6 sweet potatoes
4 tbsp. hot grease
3/4 to 1 c. sugar
1 1/2 tsp. vanilla

Peel sweet potatoes. Cut in wedges like French fries. Put in hot grease in a 10-inch skillet. Saute 2 minutes. Add enough water to steam for 20 minutes covered. Add sugar, cook additional 15 minutes. Add vanilla just before taking off the heat. (Cook with sugar in uncovered skillet until potatoes are candy coated.)
