LENTEN FRITTERS (FOR FRUIT) 
1 c. water
1 tsp. baking powder
2 to 3 tbsp. sugar
1 c. all-purpose flour
1/2 tsp. salt
1 tbsp. oil

Grate an apple or slice a banana into batter. If canned fruit is used, drain and add to the batter, about 1/2 to 1 cup. Fry in oil. These can be eaten with pancake syrup or honey.

LENTEN FRITTERS (FOR VEGETABLES OR SHELL FISH) :

The same basic batter as above except that the sugar is omitted. These can be deep fried or pan fried.
