CHEESE WAFERS 
1 c. butter
4 c. shredded sharp cheese
2 c. all-purpose flour
2 c. finely chopped pecans
1 tsp. pepper
2 tsp. salt

Cream butter and cheese. Add other ingredients. Mix well. Roll into a long roll. Refrigerate several hours or overnight. Slice in thin rounds. Place on slightly greased cookie sheet. Bake at 325 degrees until edges are slightly brown, 12-15 minutes.

The dough may be frozen and baked months later. The baked wafers also freeze nicely.
