BILL'S BUTTERMILK CAKE WITH PINEAPPLE ICING | |
Beat 5 egg whites until foamy. Add 2/3 cup sugar and beat until fluffy and will stand in peaks. Put in refrigerator. Add 1/2 teaspoon baking soda to 1 cup buttermilk. Cream 1/2 pound butter with 2 1/3 cups sugar. Sift 3 cups flour. Add 5 egg yolks alternately with flour and cup of buttermilk. Add flavoring, 2 1/2 tablespoons vanilla. Fold egg whites into mixture. Can be baked as a layer cake or in a tube pan. If baked in a tube pan use the following degrees: 20 minutes at 375 degrees 20 minutes at 350 degrees 20 minutes at 325 degrees If baked as a layer cake bake at 350 degrees for 35 to 40 minutes. PINEAPPLE ICING: 2 egg yolks 2 tbsp. flour 2 c. sugar 1 lg. can crushed pineapple |
