HERBED STUFFING 
1 med. onion, chopped
2 stalks celery, thinly sliced
1 1/2 c. low-fat chicken broth
1 (8 oz.) pkg. herb stuffing mix
1 tsp. grated lemon rind

Boil chicken broth and vegetables until tender. Combine with other ingredients. Mix well with a fork. This amount will stuff six Cornish game hens or a 5-8 pound roasting chicken. Double the recipe for a 12-16 pound turkey.

To serve as a side dish, cover and bake for 30 minutes in a 350 degree oven.
