DATE FILLED COOKIES 
1 c. shortening
2 c. brown sugar
3 eggs
1 tsp. baking soda
1 tbsp. hot water
1 tsp. vanilla
1/2 tsp. salt
4 c. flour

FILLING:

1 1/2 c. chopped dates
1 c. brown sugar
1 c. water
2 rounded tbsp. flour
Juice of 1 lemon
Pinch of salt

Cook and cool.

Cream shortening and sugar. Add 1 egg at a time. Add hot water with soda, vanilla. Fold in flour and salt. Roll out dough. Cut with round cookie cutter. Add teaspoon of filling on each and flip over. Press edges and bake at 350 degrees until done.
