HALIBUT CASSEROLE SUPREME 
2 qts. water
1/2 tsp. salt
1 lb. halibut fillets
1 c. cooked wide egg noodles
2 hard-cooked eggs, diced
1 c. chopped celery
1/2 c. chopped green pepper
1 tbsp. butter, melted
3 tbsp. butter
3 tbsp. all-purpose flour
1 1/2 c. milk
3/4 c. (6 oz.) shredded Cheddar cheese
1/2 c. mayonnaise
1 tsp. salt
1/8 tsp. paprika
1 c. soft bread crumbs
1 tbsp. butter, melted

Bring water and 1/2 teaspoon salt to a boil in a large Dutch oven; add halibut fillets. Cover, reduce heat, and simmer 10 to 15 minutes or until fish flakes easily when tested with a fork. Drain well, and flake fish.

Combine fish, cooked noodles, and eggs in a large bowl; toss gently, and set aside. Saute celery and green pepper in 1 tablespoon melted butter in a skillet over medium heat until tender. Add sauteed vegetables to fish mixture; toss gently.

Melt 3 tablespoons butter in heavy saucepan over low heat; add flour stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly until mixture is thickened and bubbly.

Add shredded Cheddar cheese, mayonnaise, 1 teaspoon salt, and paprika, stirring well. Add cheese sauce to fish mixture, stirring well. Pour mixture into an 11 x 7 x 2 inch baking dish. Combine bread crumbs and 1 tablespoon melted butter in a small bowl; stir well. Sprinkle bread crumb mixture evenly over fish mixture in baking dish. Bake at 350 degrees for 30 minutes or until casserole is thoroughly heated. Yield: 6 servings.
