MACARONI AND CHEESE 
2 qt. water
2 tsp. salt
1 c. uncooked macaroni
2 tbsp. butter
2 tbsp. flour
1/2 tsp. salt
1/8 tsp. pepper
1 c. milk
1 c. grated sharp American cheese
1/2 c. dry bread crumbs
1 tbsp. butter

Place water and 2 teaspoons salt in saucepan and bring to a rapid, rolling boil. Add macaroni gradually, so water does not stop boiling. Cook, uncovered, stirring occasionally to prevent sticking, for 10 minutes or until fairly tender. Drain in colander.

Make medium white sauce with 2 tablespoons flour, 1/2 teaspoon salt, 1/8 teaspoon pepper and 1 cup milk. Add grated cheese to white sauce and stir until cheese melts. Place macaroni in greased baking dish, and pour cheese sauce over it.

Cover with bread crumbs and dot with 1 tablespoon butter. Bake in moderate oven (350 degrees) for 15 to 20 minutes or until crumbs are brown.
