LIZ'S MACARONI AND CHEESE 
1 1/2 lb. uncooked macaroni
8 tbsp. butter
8 tbsp. flour
2 tsp. salt
1/2 tsp. pepper
4 c. milk (I use non-fat or skim milk)
1/2 lg. box Velveeta cheese

Cook macaroni until firm, not too soft. For white sauce, melt butter over low heat. Add flour, salt, and pepper. Stir until well-blended, a wire whisk is best. Gradually stir in milk.

Cook, stirring constantly, until smooth and thickened. Add chunks of Velveeta cheese (marble-size to 1 inch). Stir constantly. Pour cheese, white sauce over macaroni; stir well. Serves a small army (at least 10 people).
