HAM AND NOODLE CASSEROLE 
1 (8 oz.) box noodles
Sweet butter
2 c. diced ham
1/2 c. grated Swiss cheese
1/4 c. green pepper, finely diced
1/4 c. celery, finely diced
1 c. cream or milk (we prefer cream)
1/2 c. sherry
1 egg, beaten
1/4 tsp. paprika
Bread, or cracker crumbs

Parboil the noodles for 8 minutes, drain and toss with some butter to prevent the noodles from sticking. Set aside. Mix the ham, cheese, green pepper and celery together. Grease a baking dish and line the bottom with a layer of noodles. Top with the ham mixture. Repeat this procedure, ending with a layer of noodles. Combine the cream, sherry, egg, and paprika and mix thoroughly. Pour over the casserole, and top with the bread crumbs. Bake in a 350 degree oven for 30 to 35 minutes, or until piping hot. Add a salad and a bottle of Chablis to the table. Serves 4.

VARIATIONS:

Use dry white wine or vermouth in place of sherry. Try a combination of ham and chicken, OR substitute for ham: chicken, turkey, shrimp or crabmeat.
