SCAMPI ALLA GRIGLIA (GRILLED
SHRIMP)
 
2 lbs. raw shrimp
3/4 c. olive oil
3/4 tsp. salt
1/2 tsp. freshly ground pepper
2 cloves garlic, minced
3 tbsp. minced parsley

Wash seafood; shell and devein. Drain well.

Mix together oil, salt, pepper, garlic, and parsley. Marinate shrimp in mixture 1 hour, basting and turning frequently. Remove shrimp and thread on 4 or 6 wooden skewers or long toothpicks. Arrange on baking sheet. Broil 10 minutes, turning skewers and basting with marinade several times. Serve immediately with lemon wedges.
