STUFFED TOMATOES WITH BASIL 
4 lg. ripe tomatoes
1/2 c. bread crumbs
1/4 c. sm. cubed mozzarella
1/4 c. chopped fresh basil
1 clove garlic, chopped fine
1 tbsp. onion, chopped fine
1/2 tsp. salt
1/8 tsp. pepper
4 tbsp. olive oil

Cut tomatoes in half and scoop out seeds. Place upside down on paper towels to drain. Mix all other ingredients together with chopped up tomato centers and spoon into tomato halves which have been placed in an oiled baking pan open-side up. Sprinkle 2 tablespoons parmesan cheese on top and drizzle 1 tablespoon olive oil over all. Bake 30 minutes in preheated 375 degree oven.
