SPINACH TART 
2 (10 oz.) pkgs. frozen chopped spinach, thawed and squeezed as dry as possible
1 packet Lipton onion soup mix
3 oz. part-skim Ricotta
1 sm. tomato, sliced
1 egg, lightly beaten
1/2 c. sour cream

Preheat oven to 350 degrees. In food processor or blender, combine all ingredients thoroughly, except tomato, pour into 9 inch round casserole dish coated with non-stick spray, bake 45 minutes or until firm, serve topped with sliced tomato. Yield: 4 servings - 182 calories - 1 meat, 1 vegetable, 1 fat, 1 joker like a snack, give it up.
