MACHBOOS- MIDDLE EAST RECIPE 
1 kg whole chicken (2 1/4 lbs)
2 cup basmati rice (or normal rice)
1 large onion, sliced
1 clove garlic, crushed
1 cm of ginger, crushed (1 thick slice)
5 pieces of curry leaves
1 hot chili, chopped
1 tomato, chopped
2 tablesspoons mixed spices and salt
1/2 teaspoon turmeric

Cut the chicken into 8 pieces. Wash the rice very well and soak it for 1 hour. Fry the chicken until golden and set it aside (do not over cook).

Boil some water (around 1 quart/litre) and set it aside. Fry the onion in 3 tablespoons of oil until golden. Add garlic, chili, ginger, curry leaves and mix for 1 minute. Add the spices and salt (to taste) then the tomato and mix well. Cover and simmer for 5 minuntes.

Drain the rice and add it to the mixture, stirring well. Add the boiled water - just enough to cover the rice. Cover the pan and simmer on very low flame until cooked. Serve with green salad.
